Logic Pro Forty Tracks to Sixteen Channels

I have a 40-track project in Logic X. The tracks will be mixed into 5 stereo groups. In other words 8 synchronized stereo tracks. I am planning a performance of the recording (nothing live at the same time) where the 8 synchronized stereo outputs are routed to 8 stereo systems. In other words, I need 16 distinct channels.
Do I need a 16-channel USB audio interface or can I use two 8-out audio interfaces, or two 4-channel plus one 8-channel interfaces? I don't need any mic preamps, which a lot of expensive interfaces provide. Any suggestions of gear that would work? Also, is Logic the best program for the playback?
 
If you have 8 plain stereo stems (without plugins) you can use any audio program for playback that can play your files. Including Logic.

Output methods:
One 16-channel interface.
A digital mixer.
Two (almost) identical 8-channel interfaces which can be chained (i.e. RME or Metric Halo).
Two identical or different 8-channel interfaces combined to an "Aggregate Device" (set in Audio MIDI Setup).
One 8-channel interface with ADAT to an 8-channel converter (i.e. Behringer's ADA8200).

For a digital mixer I would use an USB or Ethernet cable rather than wireless. Or play from USB stick (but then you have no control over the playback). If you already have an 8-channel interface with ADAT, the method with the ADA8200 is the cheapest.

Thanks Peter. I need to educate myself more about this. Will one 8-channel interface with ADAT to an 8-channel converter deliver the 16 channels required for 8 stereo signals?

Right now I just have a 2-channel Fast Track Pro. It is working for my needs, but has been unsupported by the company since 2015. I am applying for funding for my current project, called Forty Words for Yes, which will include the sound systems and whatever hardware is needed. I won't be buying top of the line items, more Behringer-priced. I would appreciate suggestions of what gear to acquire and what software to use.
It will be presented in a gallery and I would prefer to not tie up a computer and the Logic program.
