When I am recording multitrack's. The only way I can get the artist to not hear is to turn the stereo output off in the inspector so the track doesn't route back to their headphones. Then when I want to preview what I recorded I have to flick the stereo output back on. Surely I am doing this the/a wrong long way round

For sure 🙂.
First of all you have to use some multi audio output device which offers at least two outputs. If not you can share your stereo output into two mono (just for monitoring) which will require some modifications of the setup I describe below.

Let's say you use a device with two stereo outputs...
1. Select the all Audio Tracks and Instrument channels in the Track Mixer or in the Environment Mixer and create a send routed to Bus 10 for example. This way you will create sends for the all Audio tracks and Instruments in one go. Option click one of the sends (while all channels are selected) to set it to the 0dB.
This send will be for the Headphone monitoring. An Aux channel will be created automatically which input will be fed from Bus 10.
2. Select the newly created Aux and name it as "H.P" (Headphones). Now change its output from 1-2 to 3-4 (as I mentioned previously the second physical out 3-4 of your audio device must be cabled to the Headphones Preamp etc).

This way you can use the Aux "H.P" as a global level balance, mute/unmute it etc. You can set custom headphone level for each track as well using the send knobs.
Hint: The Sends will be set by default to "Post" but if you want to have absolutely independent monitoring you can set them to "Pre".
