Video out of HDMI port on Mac Mini? Possible?

While I don't know for sure, I would suggest just trying it. If there are any issues, just remove the new monitor and cable you should be back to where you started.

Thanks for your reply, but I should have mentioned, that reason I was asking is because I'm considering buying a mac mini as a video slave and I was wondering if anyone had already tried it.
